Launching Today – WILD at Rafters: A Forest-Inspired Dining Experience at Celtic Manor Resort

We’re thrilled to announce the launch of WILD at Rafters, an extraordinary limited-time dining experience at The Celtic Manor Resort. Running from Tuesday 30th September to Saturday 11th October 2025 (excluding Thursday 2nd October), this autumn pop-up promises to transport diners deep into the wilderness through flavour, setting and atmosphere.
A Feast Inspired by Nature
Set high above the fairways of the iconic Twenty Ten golf course, Rafters provides the perfect backdrop for this forest-inspired journey. With raw wood interiors, natural textures and sweeping views across rolling parkland, guests will be immersed in a dining space that mirrors the untamed beauty of the great outdoors.
A Menu to Excite the Senses
Executive Head Chef Michael Bates has curated a menu that celebrates seasonal, locally sourced ingredients with bold creativity. Expect dishes inspired by the forest, land and sea, including:
- Dry-aged Welsh venison with elderberry and smoked beetroot
- Wild mushroom pithivier with truffle and hazelnut
- Line-caught sea bass with foraged sea herbs
- Woodland fruit and botanical-infused desserts
An expertly crafted wine and cocktail list complements the earthy and vibrant flavours, making every course a sensory adventure.
