
This year, La Tua Pasta is proud to introduce two exceptional additions to our pasta and sauce range, crafted using wild British venison. Thoughtfully made and rooted in Italian tradition, these dishes highlight how beautifully wild meat can be elevated through careful craftsmanship and time-honoured techniques.
Wild venison is not only outstanding in flavour, but also one of the most sustainable meats available. Free from intensive farming, naturally lean, and rich in nutrients, it closely aligns with Eat Wild’s mission to promote food that is better for both people and the planet.
Venison Quadrotti
Their Venison Quadrotti are generous, square-shaped pasta parcels designed to let the filling truly shine. The pasta is crafted from a blend of 00 and durum wheat flour, enriched with 30% free-range egg, giving it a distinctive golden colour and a luxurious bite.
Inside, slow-cooked wild British venison takes centre stage. Tender and deeply savoury, the filling is layered with a classic soffritto, tomato sauce, aromatic herbs, subtle hints of red wine, and earthy undertones that reflect the landscapes it comes from. The result is a rich yet balanced flavour that lingers on the palate without overpowering.
To serve, pair the Quadrotti with sage butter to enhance the venison’s natural richness, and finish with a generous shaving of Parmigiano Reggiano.
Venison Ragù
Inspired by the rustic kitchens of Tuscany, where game has long been a cornerstone of regional cooking, their artisan Venison Ragù is a true celebration of slow food.
Crafted with wild British venison, this ragù delivers a deep, rich flavour, gently lifted with aromatic bay leaves and rosemary. Slowly cooked for tenderness and layered depth, it captures the essence of seasonal dining and the comforting simplicity of traditional Italian cuisine.
Serve with fresh Tagliatelle or Pappardelle to create a dish that brings the true taste of the Tuscan countryside to your table, while honouring Britain’s own wild produce.
Availability & Cooking Guidance
The Venison Quadrotti and Venison Ragù are available year-round; however, due to seasonality, we particularly recommend them from October to February.
- Pasta cooking time: 3–4 minutes fresh, 4–5 minutes from frozen
- Ragù: Gently bring to the boil while stirring. Ensure the sauce is piping hot and above 65°C before serving.
